Eating healthy is so difficult, especially when your favorite comfort foods are making your skinny jeans harder to fit into; and who wants to deal with that! It sucks to deprive yourself of your favorite foods, and if you do, you just might find yourself bingeing on them and feeling guilty later. I started replacing my favorite foods with healthier alternatives to avoid doing that a few years ago, and it definitely makes it easier to stick to a clean diet.
Mashed cauliflower has become one of my absolute favorite dishes! It is so creamy, filling, delicious, and much healthier than mashed potatoes! Cauliflower is very low in carbohydrates compared to potatoes, and cauliflower is also packed with vitamins and nutrients.
This recipe is vegan-vegetarian friendly, so yummy, and very simple to make. Preparing and cooking this recipe takes about 10 minutes and can be used as a side dish for dinner or lunch. Lets get started!
- 1 Head of cauliflower
- 2 Cloves of garlic
- 1 Half cup of almond milk (unsweetened)
- 1 Tsp of salt
- 1 Tbsp of Vegan Butter (regular butter can also be used)
- 1 Tbsp of Pepper
1.Bring water to a boil in a pot and place a steamer basket into the pot.
2.Place cauliflower and garlic cloves into the steamer basket for about 5 minutes or until cauliflower is tender. If you do not have a steamer basket, boil the cauliflower until it is tender.
3. Place cauliflower, garlic cloves and all other ingredients into a food processor. You can also use a blender or hand mixer if you do not have a food processor. Blend the contents until is to smooth and creamy!
4. You can sprinkle your mashed cauliflower with vegan (or regular) cheese and garnish with parsley or chives!
